The Bikini Cocktail
Serves 10 guests
For the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Drink (yields 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
For the Cordial: Combine the listed ingredients into a saucepan, bring to a light boil, agitating so the sugar melts. After that, remove from the heat and leave to cool entirely. Decant into a clean bottle, close it and refrigerate it in the fridge, it will last for about four weeks.
To make Premix: Mix all the liquids into one big jug, let it rest for an hour, then filter it , ideally through a fine cloth, so it's perfectly clear.
To serve: Pour 85ml of the batch mix into your cocktail shaker containing ice, gently stirring lightly for about 60 seconds to chill. Pour to a cold coupe glass or equivalent, decorate with a few cranberries and finish with a light spray of the essential oil above the glass.
